Grilled Pimento Cheese Sandwich With Bacon and Fried Green Tomatoes
A grilled pimento cheese sandwich with bacon and fried green tomatoes? Absolutely!
I can’t remember when we started making this or what gave us the idea for this combination, but it is one you have GOT to try.
This sandwich is decadent. It’s not healthy at all.
But it tastes like summer and is about as southern as it can possibly be. Pimento cheese spread on two pieces of sourdough bread with bacon and fried green tomatoes and then all of that is grilled with butter in a skillet.

Grilled Pimento Cheese Sandwich with Bacon and Fried Green Tomatoes
The minute that local tomatoes hit the farmer’s markets we pick up some of the green ones and come home and whip up this grilled pimento cheese sandwich aka the best summer sandwich EVER!
You are going to need sourdough bread, green tomatoes, bacon, and pimento cheese.
Good food starts with good ingredients so get the best sour dough bread you can find, great home-grown green tomatoes and some amazing thick bacon.
Here is my favorite recipe for homemade pimento cheese but you can also use the Palmetto brand if you don’t have time to make your own.
If you have an iron skillet to cook this in it is even better! I adore my Smithey skillet, but there are less expensive options that are also great.
Grilled Pimento Cheese Sandwich with Bacon and Fried Green Tomatoes
Ingredients
- 8 slices Sourdough Bread
- 8 slices Bacon
- 1 16 ounce Palmetto Brand Pimento Cheese Original
- 3-4 Green tomatoes
- 1/2 cup White flour
- 1/2 cup Cornmeal
- 1/2 cup Buttermilk
- 1 large Egg
- salt and pepper
- 1/2 cup vegetable oil
- 2 Tbsp Butter
Instructions
Cook the Bacon
- Cook the bacon to your liking
- Set bacon aside on a plate with paper towels to drain
- Reserve 4 Tbsp of bacon grease to use to make the Fried Green Tomatoes
Make the Fried Green Tomatoes
- Slice the green tomatoes into 1/4 inch slices
- Mix the cornmeal and flour with a little salt and pepper in a shallow dish
- Mix the buttermilk and egg in another shallow dish
- Dip the tomato slices into the flour and cornmeal mixture, then into the buttermilk and egg mixture and then back into the flour and cornmeal.
- Coat the bottom of a skillet with vegetable oil and the reserved bacon grease – about 1/8 inch of oil in the bottom of the pan
- Heat the oil to about 375 degrees
- Fry the tomatoes about 2 minutes per side until golden brown
- Set tomatoes on paper towels to drain and sprinkle with salt
Make the Sandwich
- Put pimento cheese on two pieces of sourdough bread
- Place 2 slices of bacon on the sandwich
- Add one or two of the fried green tomatoes
- Grill on both sides over medium heat in a tablespoon or two of butter until bread is golden and cheese is melty. Flip carefully.
- Enjoy!!
