Marinated Vegetable Salad with Shoepeg Corn

This old-fashioned marinated vegetable salad is full of peas, green beans, crunchy vegetables, and pimentos tossed in a tangy marinade.

Ingredients
  

  • 1 can French-style green beans, drained and rinsed
  • 1 can Shoepeg corn, drained and rinsed
  • 1 can Le Seuer very small peas, drained and rinsed
  • 1 jar Pimentos, drained and rinsed
  • 3 - 4 stalks Celery chopped
  • 1 small Onion, finely chopped
  • 1 green Bell pepper, chopped
  • 1/4 cup Sugar
  • 1 tsp Salt
  • 1 tsp Celery seed
  • 1 tsp Dry mustard
  • 1/4 cup Apple cider vinegar
  • 1/4 cup Vegetable oil

Instructions
 

  • Put the green beans, peas, Shoepeg corn, pimentos, celery, onion, and green bell bell pepper in a bowl.
  • In a smaller bowl whisk together the sugar, salt, celery seed, dry mustard, apple cider vinegar, and vegetable oil.
  • Pour marinade over the vegetables and toss to coat.
  • Place in refrigerator for at least a couple of hours to allow the flavors to come together. It gets better and better
