Marinated Vegetable Salad with Shoepeg Corn
This old-fashioned marinated vegetable salad is full of peas, green beans, crunchy vegetables, and pimentos tossed in a tangy marinade.

- 1 can French-style green beans, drained and rinsed
- 1 can Shoepeg corn, drained and rinsed
- 1 can Le Seuer very small peas, drained and rinsed
- 1 jar Pimentos, drained and rinsed
- 3 - 4 stalks Celery chopped
- 1 small Onion, finely chopped
- 1 green Bell pepper, chopped
- 1/4 cup Sugar
- 1 tsp Salt
- 1 tsp Celery seed
- 1 tsp Dry mustard
- 1/4 cup Apple cider vinegar
- 1/4 cup Vegetable oil
Put the green beans, peas, Shoepeg corn, pimentos, celery, onion, and green bell bell pepper in a bowl.
In a smaller bowl whisk together the sugar, salt, celery seed, dry mustard, apple cider vinegar, and vegetable oil.
Pour marinade over the vegetables and toss to coat.
Place in refrigerator for at least a couple of hours to allow the flavors to come together. It gets better and better
